Vanilla is the sweetest and most refined spice originally from Tropical America. Europe learned about it thanks to the discovery of the New World. Originally Vanilla was used by the Aztecs to flavor and soften the bitterness of their traditional chocolate drink, the conquistadors took it over and the great journey of Vanilla began.

Brought back to Europe in the XVIth century, Vanilla became very popular, it could not be cultivated outside of Mexico until the XIXth century. It was on Reunion Island (formerly Bourbon Island) that Edmond Albius found a method of pollinating vanilla. This method was exported to Madagascar and many tropical countries such as the Antilles and Tahiti to be cultivated there.
